How the Halloumi Cheese is produced? (Nicosia, Cyprus)
Halloumi cheese is widely known as one of the dredominantly Cypriot delicacies. The first written rference to halloumi was made in 1556, during the Venetian domination of the island, in a manuscript document by Doge Leonardo Donna. For hundreds of years it has been a main ingredient of the Cypriot diet. In the scope of preserving the traditions of our homeland, we visited the village Vrysoules to see how this Cypriot cheese is made. From milking the sheeps to cooking it, it is a long process (6-7 hours) that in the past involved the whole family.
